Maple Dijon Pistachio Salmon: Brush salmon with tangy Dijon and sweet maple syrup, top with crunchy pistachios, bake. Delicious weeknight meal.
Ingredients:
  • 3 tablespoons maple syrup
  • 3 tablespoons coarse grain Dijon mustard
  • salt and freshly ground black pepper to taste
  • 4 (6 ounce) fillets salmon fillets
  • 0.25 cup finely chopped pistachio nuts
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • Combine mustard, maple syrup, salt, and pepper in a bowl. Spread this flavorful mixture over the salmon fillets on the baking sheet, skin-side down.
  • Bake salmon in the preheated oven for 10 minutes. Sprinkle with pistachios and bake for an additional 10 minutes or until salmon flakes easily with a fork.
