Irresistible pistachio chicken strips - loved by all ages. Easy, elegant, and sure to please all.
Ingredients:
  • 1 cup chopped pistachios
  • 0.5 cup bread crumbs
  • 2 tablespoons Dijon mustard
  • 2 large skinless, boneless chicken breast halves, cut into 1-inch strips
Instructions:
  • Preheat your oven to a toasty 500 degrees F (260 degrees C) and give your baking sheet a gentle coat of cooking spray.
  • Combine pistachios and bread crumbs in a shallow bowl. In a separate bowl, blend Dijon mustard, olive oil, honey, salt, and pepper until smooth. Dip chicken in Dijon mixture, coat with bread crumbs, then place on a baking sheet.
  • Put in a hot oven and reduce the heat to 375 degrees F (190 degrees C). Bake until the chicken is cooked through and the pistachio crust is golden brown, approximately 20 minutes.
