Transport your taste buds to Greece with this quick and flavorful souvlaki dish, ready in just 30 minutes.
Ingredients:
  • 1 yellow capsicum, cut into strips
  • 1 brown onion, thickly sliced
  • 500g pork mince
  • 400g can cherry tomatoes
  • 1 tsp dried oregano
  • 4 pita breads, warmed
  • 100g Persian fetta, crumbled
  • Fresh mint leaves, to serve
  • 1 long cucumber, finely grated, well drained
  • 250.00 ml plain Greek-style yoghurt
  • 1 garlic clove, crushed
  • 40.00 ml finely chopped fresh mint
Instructions:
  • Heat half of the oil in a large frying pan over high heat until sizzling. Cook capsicum for 4 minutes until lightly charred, stirring occasionally. Transfer to a bowl using tongs. Add onion to the pan and cook for 2 minutes, stirring constantly. Transfer onion to the same bowl.
  • In the same pan, heat the remaining oil and add the mince. Season with salt and pepper and cook for 4 minutes until well browned, using a wooden spoon to break it up. Add the vegetables back to the pan along with the tomatoes and oregano. Cook and stir for 3 minutes until the sauce thickens.
  • Prepare the Tzatziki by mixing all ingredients in a bowl and seasoning with salt and pepper.
  • Spread a generous portion of the mince mixture onto the center of each pita bread. Sprinkle each with a quarter of the feta, add dollops of tzatziki, and finish by garnishing with fresh mint leaves before serving.
