Flavorful pork shoulder roast with shallots, garlic, and rosemary - easy to make and perfect for a fuss-free meal.
Ingredients:
  • 1 (4 pound) pork shoulder roast
  • 2 (16 ounce) cans cannellini beans
  • 1 (12 fluid ounce) can beer
  • 1 (28 ounce) can stewed tomatoes, drained
  • 2 large onions, coarsely chopped
  • 10 shallots, peeled
  • 10 cloves garlic, peeled
  • salt and black pepper to taste
  • 2 bay leaves
  • 3 sprigs fresh rosemary
Instructions:
  • Preheat oven to 275°F (135°C) for the perfect cooking temperature.
  • Heat a large skillet over medium-high heat. Sear the roast on all sides for approximately 10 minutes until browned. Transfer the roast to a large roasting pan. Pour in the beans, beer, and tomatoes over the roast. Surround the roast with onions, shallots, garlic, bay leaves, and rosemary. Season everything generously with salt and pepper.
  • After covering, bake at a low temperature for 4 hours, then increase the heat and roast for 1 more hour until golden brown.
