Whip up a delicious pot pie using leftover turkey and chicken paired with a flaky pie crust for a simple and satisfying meal.
Ingredients:
  • 3 small potatoes, peeled and cut into small pieces
  • 2 (10.5 ounce) cans chicken gravy
  • 1.5 cups frozen peas and carrots
  • 1.5 cups chopped leftover chicken
  • 2 (9 inch) refrigerated pie crusts
  • 1 egg, beaten
Instructions:
  • Preheat the oven to 350°F (175°C) to ensure the perfect temperature for baking.
  • In a large pot, cover potatoes with salted water and bring to a boil. Then simmer on medium-low for 5 minutes. Drain and season with salt.
  • Mix the cooked potatoes, flavorful gravy, sweet peas and carrots, and tender chicken in a bowl.
  • Place one crust in the 9-inch pie pan, pour in the potato mixture, then top with the second crust. Seal the pie by pinching the edges and trim off any excess dough. Make a small vent cut in the center of the crust and brush the top with beaten egg.
  • Bake until golden brown, approximately 35 minutes in the preheated oven.
