Creamy dill cucumber dressing over red potatoes.
Ingredients:
  • 1 pound red potatoes, cut into 3/4-inch cubes
  • 0.25 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 2 sprigs chopped fresh dill, or to taste
  • salt and pepper to taste
  • 0.5 cucumber - peeled, seeded, and finely chopped
  • 4 green onions, sliced
Instructions:
  • In a large pot, immerse the potatoes in salted water and bring to a boil over high heat. Reduce the heat to medium-low, cover, then simmer until tender for approximately 12 minutes. Drain the potatoes and let them steam dry as you make the dressing.
  • In a bowl, combine mayonnaise, apple cider vinegar, dill, salt, and pepper. Mix in the cucumber and green onions. Gently fold in the warm potatoes until coated. Cover and refrigerate for a minimum of 2 hours before serving.
