Indulge in a creamy potato salad with homemade dressing, eggs, onions, relish, and bacon for an extra delicious twist!
Ingredients:
  • 1 1/2 lb baking potatoes, peeled
  • 1/3 cup canola mayonnaise
  • 1 tablespoon white vinegar
  • 2 teaspoons spicy brown mustard
  • 1/4 teaspoon freshly ground pepper
  • 1/2 cup chopped green onions (8 medium)
  • 1/4 cup sweet or dill pickle relish
  • 2 hard-cooked eggs, finely chopped
  • 1/8 teaspoon freshly ground pepper, if desired
  • Crumbled cooked bacon, if desired
Instructions:
  • Place potatoes in a 3-quart saucepan and cover with water. Bring to a boil, then simmer on low heat for 20 to 30 minutes until tender. Drain and let cool for 15 minutes before cutting into cubes.
  • Combine mayonnaise, vinegar, mustard, salt, and 1/4 teaspoon pepper in a large bowl. Gently toss in potatoes, onions, relish, and eggs until evenly coated.
  • Sprinkle with 1/8 teaspoon pepper and crispy bacon before serving, or cover and chill until ready to enjoy.
