Whip up a tasty potato salad in no time.
Ingredients:
  • 75.08 gm extra virgin olive oil
  • 40.00 ml white wine vinegar
  • 1 small garlic clove, halved
  • 1.5 kg red skinned potatoes
  • 3 spring onions,\tsliced
  • 62.50 ml sliced cornichons
  • 62.50 ml flat-leaf parsley leaves
Instructions:
  • In a small screwtop jar, mix together oil, vinegar, and garlic. Season with salt and pepper. Shake well to combine, then let it sit for a moment.
  • Rinse potatoes and slice them thickly. Boil in a large saucepan filled with cold water. Simmer uncovered for 8 minutes until just tender. Drain thoroughly and transfer to a big bowl.
  • *Once the potatoes are warm, give the dressing another shake and remove the garlic. Drizzle two-thirds of the dressing over the potatoes. Gently mix together without mashing the potatoes. Allow the mixture to cool down to room temperature.*
  • Place the potatoes elegantly on a platter and generously sprinkle with onions, cornichons, and parsley. Finish by drizzling the remaining dressing over the top before serving.
