Make a vibrant and chic rainbow ice-cream cake for your next gathering.
Ingredients:
  • 2 x 300ml ctns double cream
  • 395g can sweetened condensed milk
  • 6 different food colourings (see note)
  • 100g bought butter cake, cut into 1cm-thick slices
  • Hundreds and thousands, to decorate
Instructions:
  • Prepare the loaf pan by lining it with baking paper, making sure to leave some paper hanging over the sides. In a large jug, mix together the cream and condensed milk.
  • Transfer a portion of the cream mixture to a small bowl. Beat with electric beaters until soft peaks form, being careful not to over-beat. Gradually add one of the food colorings a few drops at a time, stirring until vibrant. Spoon the mixture into the prepared pan, smoothing the surface. Freeze for 1 hour until chilled and firm.
  • Continue layering the remaining cream mixture in 5 more batches, each time adding a different food coloring to create 5 vibrant layers.
  • Once the final layer of ice cream has slightly softened, delicately place the cake on top, cutting to match the size. Chill in the freezer overnight.
  • Remove the ice-cream cake by briefly placing the pan on a hot cloth. Use the paper to slide the cake out of the pan onto a platter, cake-side down. Sprinkle hundreds and thousands on top of the cake.
