Create homemade Asian red bean ice cream.
Ingredients:
  • 3 egg yolks
  • 1 cup milk
  • 1.5 cups sweetened red bean paste
  • 1.5 cups heavy whipping cream
Instructions:
  • Whisk egg yolks and sugar in a large bowl until pale yellow.
  • Boil milk in a saucepan, then gradually pour it into the egg mixture while whisking vigorously until fully combined.
  • Gently pour the milk mixture into a saucepan and simmer over low heat. Stir constantly until the mixture thickens slightly but avoid letting it boil, approximately for 10 minutes.
  • Combine the red bean paste with the thickened milk mixture and transfer to a large bowl to cool for a few minutes. Whisk in the cream until the mixture is smooth.
  • Chill the ice cream base completely by covering the bowl with plastic wrap and refrigerating for 1 to 3 hours.
  • Transfer the mixture into an ice cream maker and freeze as per the manufacturer's instructions.
