Bean and Gruyere lasagna with creamy bechamel sauce.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 (15 ounce) can red beans, drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 0.5 red bell pepper, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups cold milk
  • 0.5 cup grated Parmesan cheese
  • 4 no-boil lasagna noodles
  • 4 ounces shredded Gruyere cheese
Instructions:
  • Preheat your oven to a perfect 350 degrees F (175 degrees C).
  • In a skillet over medium heat, sauté the onion in olive oil until tender. Add garlic and cook until fragrant. Stir in red beans, tomatoes, and red bell pepper. Season with basil, oregano, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  • In a saucepan over medium heat, melt the butter and whisk in the flour until smooth. Gradually pour in the milk, then add Parmesan cheese and cook until slightly thickened, stirring constantly.
  • In a 9x9 inch casserole dish, alternate layers of red bean mixture and lasagna noodles. Finish with a layer of sauce and a topping of Gruyere cheese before baking.
  • Bake in a preheated oven for 20 minutes or until lightly browned.
