Easy summer side dish of sautéed zucchini with vibrant dill. Ready in 15 minutes with just 6 ingredients. Perfect with grilled chicken or fish.
Ingredients:
  • 6 medium zucchini (7-inches long, 2 1/2 pounds or 1.10 kg total)
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon ground black pepper, plus more to taste
  • 2 tablespoons chopped fresh dill
  • Zest from one lemon
Instructions:
  • Prepare the zucchini by removing the stem and trimming the bottom end. Slice it into 1/8-inch rounds using a mandoline, food processor, or your finest knife skills.
  • In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Cook half of the zucchini without stirring for 4 minutes until some are golden. Season with 1/4 teaspoon salt and 1/8 teaspoon pepper. Flip and cook for 2 minutes more. Repeat once. Transfer to a bowl. Cook the remaining zucchini with the rest of the oil, salt, and pepper. Return all zucchini to the pan.
  • Enhance the zucchini: Sprinkle hot zucchini with fresh dill and lemon zest, then toss thoroughly. Adjust seasoning to taste with additional salt and pepper as desired.
  • Serve this versatile dish hot or warm for a delightful experience.
