Ingredients:
  • 36.40 gm olive oil
  • 30g butter
  • 800g (about 4) green zucchini, washed, coarsely grated
  • 2 300g cans chickpeas (Edgell brand), drained, rinsed
Instructions:
  • In a deep frying pan, heat oil and butter over medium-high heat until foamy.
  • Cook the zucchini until slightly browned, stirring occasionally for about 5 minutes, then add the chickpeas.
  • Place a round piece of non-stick baking paper directly on top of the zucchini and chickpeas.
  • Simmer on medium-low heat for 8 minutes until zucchini is tender, then season with salt and pepper to taste.
