Try this flavorful sautéed zucchini dish with sweet onion, tomato, garlic, and chicken bouillon for a quick and tasty side!
Ingredients:
  • 1 tablespoon butter
  • 1 sweet onion, chopped
  • 1 clove garlic, minced
  • 2 tomatoes, chopped
  • 0.5 cup water, divided
  • 1 cube chicken bouillon
  • 1 large zucchini, thinly sliced
  • ground black pepper to taste
Instructions:
  • In a large skillet over medium heat, melt butter until sizzling; sauté onions until soft and translucent, approximately 5 minutes.
  • Introduce freshly minced garlic into the pan, and sauté, continuously stirring for an additional minute.
  • Combine juicy, ripe tomatoes and 1/4 cup of water into the mixture. Cover the pot and simmer, giving it an occasional stir, until the tomatoes have slightly reduced, approximately 5 minutes.
  • Add another 1/4 cup of water to the skillet along with the bouillon cube. Stir until the bouillon is dissolved. Then add the zucchini and cook until tender, for about 5 to 7 minutes.
  • Sprinkle with freshly ground black pepper and plate up.
