Slow cooker beef stroganoff with fresh mushrooms, red wine, and sour cream for a rich, creamy dish with minimal effort.
Ingredients:
  • 1.5 pounds cubed beef stew meat
  • salt and ground black pepper to taste
  • 1 onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 0.25 cup water
  • 1 tablespoon dried chives
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 cube beef bouillon
  • 0.5 cup red wine
  • 1 tablespoon all-purpose flour
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package sliced fresh mushrooms
  • 4 ounces cream cheese
  • 0.5 cup chopped fresh parsley
Instructions:
  • Place beef stew meat in the slow cooker and season generously with salt and pepper. Top with onion slices. Pour in mushroom soup and water, then add chives, garlic, Worcestershire sauce, and beef bouillon.
  • Combine red wine, cornstarch, and flour in a small bowl and pour it over the mixture in the slow cooker.
  • After simmering low and slow for 6 to 7 hours, gently fold in sour cream, mushrooms, cream cheese, and parsley into the tender beef mixture. Cook for an additional hour to meld the flavors together perfectly.
  • Ladle the delicious sauce over a bed of piping hot pasta.
