Creamy ranch chicken chili made with tender chicken breasts, tangy cream cheese, and zesty RO*TEL® tomatoes, effortlessly cooked to perfection in a slow cooker.
Ingredients:
  • 3 skinless, boneless chicken breasts
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14 ounce) can corn, undrained
  • 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®), undrained
  • 1 (1 ounce) package ranch dressing mix
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 (8 ounce) package cream cheese
Instructions:
  • Layer the chicken breasts in the slow cooker, followed by the cannellini beans, black beans, corn, and tomatoes. Sprinkle ranch dressing mix, chili powder, cumin, and onion powder evenly over the ingredients. Top with cream cheese and cook on Low for 6 to 8 hours until the chicken is fork-tender.
  • Take out the chicken breasts from the slow cooker and shred them using two forks or cut them into bite-sized chunks. Stir the shredded chicken back into the slow cooker, ensuring it's mixed well with the chili.
