Slow-cooked Southwest chicken with tomatoes, corn, and cilantro - a taste of the American Southwest in every bite.
Ingredients:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can fat-free chicken broth
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
  • 1 (8 ounce) bag frozen corn
  • 0.25 cup chopped fresh cilantro
  • 3 scallions, chopped
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper, or to taste
  • 1.5 pounds skinless, boneless chicken breast halves
Instructions:
  • Add a flavorful mix of black beans, chicken broth, diced tomatoes with green chile peppers, corn, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper, and salt to the crock pot. Place seasoned chicken breast on top of the beans mixture.
  • Slow cook for 9 1/2 hours on Low heat.
  • Transfer the succulent shredded chicken back into the aromatic beans mixture in the slow cooker, ensuring every delicious strand gets evenly coated.
  • Simmer gently for an additional 30 minutes.
