Succulent pot roast made effortlessly delicious!
Ingredients:
  • 1 large onion, halved, thinly sliced
  • 1 lb small red potatoes, cut into quarters
  • 1 bag (12 oz) ready-to-eat baby-cut carrots
  • 1 tablespoon chopped garlic
  • 1 boneless beef pot roast (2 1/2 to 3 lb)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
  • Chopped fresh parsley, if desired
Instructions:
  • Coat a 5- to 6-quart slow cooker with cooking spray.
  • Layer the onion, potatoes, carrots, and garlic in the bottom of the slow cooker.
  • Lay the beef over the colorful medley of vegetables. Season generously with salt and pepper. Blanket the dish with a rich layer of flavorful tomatoes.
  • Cover and cook on High heat for 4-5 hours or on Low heat for 6-8 hours. Serve the beef and vegetables with the sauce and garnish with parsley.
