Easy Spinach Pie

Cheesy spinach pie ready in 50 minutes!
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 bag (10 oz) washed fresh spinach, finely chopped
  • 1 small red bell pepper, chopped (1/2 cup)
  • 3/4 cup milk
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 3 eggs
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat oven to 350°F and grease a 9-inch pie plate with shortening. In a 12-inch skillet over medium heat, melt butter. Stir in spinach and bell pepper, cooking for about 5 minutes until the spinach wilts and the bell pepper is crisp-tender.
  • In a small bowl, whisk the remaining ingredients (excluding cheese) until smooth. Pour the mixture over the vegetables in the skillet and stir well to combine. Transfer everything into a pie plate.
  • Bake for about 30 minutes until the center is set. Sprinkle with cheese and serve hot.
