Prepare customizable spring rolls with chicken, steak, or shrimp for a refreshing meal.
Ingredients:
  • 4 (8-inch) round rice papers
  • 0.75 cup cooked rice vermicelli
  • 4 ounces shredded cooked chicken
  • 1 cup thinly sliced English cucumber
  • 0.25 cup chopped fresh mint
  • 2 tablespoons tzatziki sauce
Instructions:
  • Fill a 9-inch pie plate with warm water and dip 1 rice paper into the water. Place it on a work surface and let it soften for a few seconds.
  • Cut cooked rice noodles. Place 3 tablespoons of noodles in the bottom third of the softened rice paper. Add 1 ounce chicken, 1/4 cup cucumber, 1 tablespoon mint, and 1/2 tablespoon sauce on top. Fold and gently press the bottom edge of the rice paper over the filling, tucking it in as you roll away from yourself. Fold in the sides and continue rolling tightly. Repeat the process with the rest of the ingredients.
