Air fryer Filipino lumpia recipe

Easy and quick crispy spring rolls cooked in an air fryer, perfect party finger food with endless dipping sauce options.
Ingredients:
  • 500g pork mince
  • 80g (1 cup) finely shredded cabbage
  • 4 green shallots, thinly sliced
  • 1 large carrot, peeled, coarsely grated
  • 3 large garlic cloves, crushed
  • 20.00 ml finely grated fresh ginger
  • 1/2 tsp white pepper
  • 21.00 gm soy sauce
  • 250g pkt frozen spring roll pastry, just thawed
  • Bought sweet and sour sauce, for dipping
Instructions:
  • Combine the mince, cabbage, shallot, carrot, garlic, ginger, pepper, and soy sauce in a large bowl, then mix thoroughly using your hands until evenly combined.
  • Separate the spring roll pastry sheets gently and loosely stack them. Cover with a clean dry tea towel followed by a damp one to prevent the pastry from drying out.
  • Lay a spring roll wrapper on a clean surface with a corner facing you. Spread 2 heaping tablespoonfuls of the mince mixture across the wrapper, one-third away from you. Moisten the opposite corner with water. Fold the nearest corner over the filling, roll once, tuck the sides, and roll neatly into a log. Place on a tray and cover with plastic wrap. Repeat to make 20 lumpia. Lightly spray with oil.
  • Add a batch of lumpia to the air fryer basket, ensuring some space between each roll. Air fry at 190C for 10-12 minutes until crispy and golden. Serve with sweet and sour dipping sauce.
