Air Fryer Lumpia

Healthier Filipino egg rolls made in an air fryer, filled with veggies and pork, served with sweet chili sauce.
Ingredients:
  • 1 tablespoon sesame oil
  • 1 pound ground pork
  • 0.33333334326744 cup chopped water chestnuts
  • 3 green onions, chopped
  • 4 tablespoons reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 3 cups shredded cabbage
  • 2 large carrots, grated
  • 18 lumpia wrappers
  • olive oil cooking spray
Instructions:
  • In a large skillet over medium-high heat, sizzle the pork until nicely browned for about 5 minutes, while crumbling it into small pieces. Stir in water chestnuts, green onion, soy sauce, and vinegar, and continue to cook for another 5 minutes.
  • Boost the heat to high and add the cabbage. Cook until the cabbage is tender and the liquid has cooked off, approximately 2 minutes. Turn off the heat and incorporate the grated carrots. Allow the mixture to cool for 3 minutes.
  • Heat up your air fryer to a toasty 400 degrees F (200 degrees C).
  • Lay a lumpia wrapper on a clean surface in a diamond shape, with one corner pointing down. Add 2 tablespoons of filling to the center of the wrapper. Fold the bottom half up, then fold in the sides tightly. Roll gently and seal by applying a few drops of water. Repeat the process with the rest of the wrappers and filling.
  • Gently spray each roll with olive oil, ensuring not to miss any spot. Place as many lumpia in the air fryer basket without overcrowding. Air fry for 5 minutes, then flip and cook for another 3 minutes until crispy. Transfer to a plate lined with paper towels. Repeat with the rest of the lumpia.
