"Crispy air-fried lumpia with a no-fuss, customizable filling."
Ingredients:
  • 1 pound Italian hot sausage links
  • 0.5 cup finely sliced green onions
  • 0.5 cup finely chopped carrots
  • 0.5 cup finely chopped water chestnuts
  • 0.25 cup diced onions
  • 2 tablespoons soy sauce
  • 0.25 teaspoon ground ginger
  • 16 spring roll wrappers
  • avocado oil cooking spray
Instructions:
  • 1. Remove the casing from the sausage and brown in a skillet over medium heat for 4 to 5 minutes. 2. Add green onions, carrots, water chestnuts, and onion. Cook until onions are soft, about 5 to 7 minutes. 3. Stir in garlic and cook for 1 to 2 minutes. 4. Season with soy sauce, salt, and ginger. Combine well and remove from heat.
  • Position a spring roll wrapper diagonally. Add a generous 1/4 cup of filling at the center. Fold the bottom corner over the filling and roll, tucking in the sides. Dampen edges lightly with water using your fingers. Repeat with remaining wrappers and filling. Lightly spray each roll with avocado oil cooking spray.
  • Preheat the air fryer until it reaches 390 degrees F (198 degrees C).
  • Arrange the lumpia rolls in the air fryer basket, ensuring they are evenly spaced. Cook in batches if needed. Air fry for 4 minutes, then flip and continue cooking until the skins are golden and crispy, about 4 more minutes.
