Cheesy baked yellow squash with creamy sauce and buttery cracker topping.
Ingredients:
  • 7 yellow squash, sliced
  • 0.25 cup milk
  • 0.5 cup butter, sliced
  • 2 eggs, beaten
  • 1 bunch green onions, tops thinly sliced
  • salt and pepper to taste
  • 3 tablespoons white sugar
  • 1 cup shredded Cheddar cheese
  • 2 cups crushed buttery round crackers
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Bring a large pot of water to a boil, then gently simmer the squash until just tender, about 15 minutes. Drain well before using.
  • Combine milk, butter, eggs, green onion tops, salt, pepper, and sugar with the squash; mix thoroughly. Spread mixture in a 9x13 inch casserole dish, then top with cheese and crushed crackers.
  • Roast in your hot oven for 30 minutes.
