Revitalize your diet with a nourishing superfood soup made with carrots, celery, onion, white beans, and hearty greens like kale or spinach. Simple, wholesome ingredients blend together deliciously for a satisfying meal that pairs perfectly with crusty bread and cheese.
Ingredients:
  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 1/2 cup chopped carrot
  • 1/2 cup chopped celery
  • 4 teaspoons finely chopped garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon dried rosemary leaves
  • 1/4 teaspoon dried sage leaves
  • 1/4 teaspoon ground black pepper
  • 1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
  • 6 cups Progresso™ reduced sodium chicken broth (from two 32-oz cartons)
  • 1 container (5 oz) mixed baby hearty greens (kale, Swiss chard or spinach)
  • 1 small (7 oz) baguette, cut into 12 slices
  • 6 tablespoons finely grated Parmesan cheese
Instructions:
  • Preheat your oven to 375°F and prepare a rimmed baking pan by lining it with foil.
  • Heat 2 teaspoons of oil in a 5-quart Dutch oven over medium heat. Cook onions, carrots, and celery for 9 to 12 minutes until carrots are tender. Add garlic, salt, dried herbs, and pepper, cook for 1 minute. Add beans and broth, bring to a simmer over high heat. Cover, reduce heat to medium-low, and simmer for 15 minutes. Stir in baby greens and simmer for 4 to 5 minutes until tender.
  • Arrange baguette slices on a pan and generously brush with the remaining 4 teaspoons of oil. Bake for 8 to 9 minutes until they are perfectly crispy and lightly browned.
  • Serve the soup in bowls, sprinkle with Parmesan cheese, and enjoy with a side of baguette.
