Easy Sweet Potatoes with Kahlua

Indulgent sweet potato dish perfect for Thanksgiving, pairs well with turkey, dressing, and pork.
Ingredients:
  • 4 large sweet potatoes, peeled and cubed
  • 0.5 cup butter
  • 0.66666668653488 cup brown sugar
  • 0.5 cup coffee flavored liqueur (such as Kahlua®)
  • 0.25 cup raisins
  • 0.25 cup toasted pecans
Instructions:
  • In a large pot, generously cover sweet potatoes with salted water and bring to a boil. Reduce heat, cover, and simmer until tender, around 20 minutes. Drain and let steam dry briefly before proceeding.
  • Place the pot back on the stove over medium heat. Combine the butter and brown sugar; cook and stir for about 5 minutes until the sugar starts to caramelize. Initially, the sugar will be foamy, then the foam will disappear, and the sugar will caramelize; continue cooking until it darkens slightly. Gently mix in the coffee liqueur, then add back the potatoes. Fold in the raisins and toasted pecans until the potatoes are slightly mashed and everything is thoroughly combined.
