Zesty Middle Eastern bulgur wheat salad with herbs, tomatoes, lemon, and olive oil. Perfect for a quick and delicious lunch!
Ingredients:
  • 2 cups vegetable stock, chicken stock, or water
  • 1 teaspoon kosher salt
  • 2 cups bulgur wheat
  • 1/2 cup extra virgin olive oil
  • Juice and finely grated zest of 2 lemons
  • 5-6 Roma or plum tomatoes, seeded and chopped
  • 2 scallions, chopped, including the greens
  • 2 to 3 cups parsley, chopped
  • 1 cup fresh mint leaves, chopped
Instructions:
  • Prepare the bulgur: In a bowl, pour boiling stock or water with salt over the bulgur. Allow it to sit for 30 minutes to an hour until fully absorbed.
  • In a large bowl, combine bulgur with olive oil, lemon juice, zest, and mix thoroughly.
  • Combine the tomatoes, scallions, and herbs with the bulgur mixture until evenly mixed. Stir well.
  • Allow the flavors to meld: Adjust the seasoning of the tabbouleh with salt, olive oil, or lemon juice according to your preference. Refrigerate for at least 30 minutes before serving. Can be stored in the refrigerator for several days. Enjoy the dish? Share your thoughts and rating below!
