Easy toffee apple self-saucing pudding

Apple custard pudding cake - a delicious twist on classic desserts.
Ingredients:
  • 3 large Granny Smith apples, peeled, cored, thinly sliced
  • 300.00 gm self-raising flour
  • 5.00 gm ground cinnamon
  • 118.80 gm brown sugar
  • 240.00 gm Vanilla Custard
  • 84.98 gm milk
  • 50g butter, melted, cooled
  • 83.75 gm golden syrup
  • 250.00 gm boiling water
  • 107.50 gm caster sugar
  • 360.00 gm Vanilla Custard, extra
Instructions:
  • Preheat oven to 180C (356F) or 160C (320F) for fan-forced ovens.
  • Place a crisp and juicy apple in a microwave-safe bowl and cover it loosely with plastic wrap. Microwave on HIGH for 3 minutes or until the apple is beautifully softened. Drain any excess liquid before moving on to the next step.
  • In a large bowl, mix together flour, cinnamon, and half of the brown sugar. Create a well in the center and pour in custard, milk, butter, and golden syrup. Stir thoroughly until well combined.
  • Spread half of the batter evenly in a 5cm-deep, 16cm x 23cm baking pan. Layer half of the apple slices in rows on top. Add the rest of the batter on top, followed by the remaining apple slices. Place the pan on a baking tray before baking.
  • In a jug, mix boiling water with the rest of the brown sugar. Gently pour this mixture over the apple layer using the back of a spoon. Bake for 45 to 50 minutes, until the pudding springs back when lightly touched and the sauce bubbles around the edges of the pan.
  • Towards the end of cooking, in a small saucepan over medium heat, combine caster sugar with 1/2 cup water. Stir for 5 minutes until the sugar dissolves. Increase the heat to high and bring it to a boil. Let it boil for 6 to 8 minutes until it turns a dark golden color. Remove from heat, wait 20 seconds for bubbles to settle, then carefully pour the hot toffee over the hot pudding. Let the pudding sit for 2 minutes to allow the toffee to set.
  • Drizzle the pudding with additional vanilla custard before serving.
