Easy tomato chutney

Ingredients:
  • 250 g red onions
  • 500 g mixed-colour tomatoes
  • 1 fresh red chilli
  • 75 ml red wine vinegar
  • 140 g brown sugar
Instructions:
  • Prepare the ingredients: peel and thinly slice the onions, roughly chop the tomatoes, and deseed and finely slice the chili. Combine them in a pan, season to taste, and mix well. Simmer for 30 to 40 minutes until it reaches a jam-like consistency. Transfer to a sterilized jar and let it cool. Store in the fridge for up to 4 weeks. Enjoy on toast with a slice of cheddar.
