Crispy tuna patties with Italian breadcrumbs and Parmesan - perfect for appetizers or sandwiches.
Ingredients:
  • 2 eggs
  • 2 teaspoons lemon juice
  • 10 tablespoons Italian-seasoned bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 3 (5 ounce) cans tuna, drained
  • 3 tablespoons diced onion
  • 1 pinch ground black pepper
  • 3 tablespoons vegetable oil
Instructions:
  • Prepare all ingredients.
  • In a bowl, whisk together eggs and lemon juice, then mix in bread crumbs and Parmesan cheese until a paste forms. Gently fold in tuna and onion until evenly combined, and season with black pepper to taste.
  • Shape the tuna mixture into 8 (1-inch-thick) patties using your hands.
  • In a skillet over medium heat, fry patties in vegetable oil until they are beautifully golden brown on each side, about 5 minutes per side.
