Quick and easy veggie-filled lo mein stir fry using cabbage, carrots, and colorful bell peppers. Perfect for mixing and matching with whatever ingredients you have on hand.
Ingredients:
  • For the sauce:
  • 1/4 cup soy sauce
  • 1/4 cup hot water
  • 2 tablespoons hoisin sauce
  • For the lo mein:
  • 2 teaspoons salt
  • 10 ounces lo mein noodles, fresh or dry
  • 1 teaspoon sesame oil
  • 8 ounces cremini mushrooms, sliced
  • 1 red pepper, sliced
  • 1 carrot, grated
  • 1 small head napa cabbage, chopped
  • For the garnish:
  • Fresh scallion, chopped
  • Sesame seeds
  • Wasabi edamame (Dad Add)
Instructions:
  • Mix together the sauce ingredients in a small bowl: soy sauce, hot water, hoisin sauce, and sesame oil.
  • Prepare the lo mein noodles by boiling them in salted water until tender, usually around 4 minutes. Refer to the package directions for accuracy. Drain the noodles and coat them with sesame oil to prevent sticking.
  • In a hot wok or skillet, sauté mushrooms in olive oil for 2 to 3 minutes until golden. Add red pepper, carrot, and cabbage, cook for another 3 minutes until vegetables are wilted, stirring frequently.
  • Combine noodles and sauce: Toss noodles with sauce and vegetables until well coated. Add water, one tablespoon at a time, if needed. Adjust flavor to taste, adding more soy sauce if desired.
  • To serve: Top the Veggie Lo Mein with scallions, sesame seeds, and wasabi edamame for a spicy crunch. Leftovers can be stored in the fridge for 3 to 4 days and reheated in the microwave.
