Quick and comforting vegetable-beef soup is ready in just 45 minutes with ground beef, veggies, and tomato sauce. Perfect for a satisfying meal in no time!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 lb ground beef (at least 80% lean)
  • 1 cup chopped onions
  • 5 cloves garlic, finely chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon pepper
  • 3 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 1 bag (16 oz) frozen mixed vegetables
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
Instructions:
  • In a 5-quart Dutch oven, heat oil over medium-high heat, then add beef, onions, and garlic. Cook for 5 to 7 minutes, stirring occasionally, until the beef is fully cooked; then drain any excess fat.
  • Combine remaining ingredients with the beef mixture in a Dutch oven. Bring to a boil over high heat, then reduce heat, cover, and simmer for 20 minutes. Stir occasionally until hot. Serve soup in 6 bowls.
