Easy and flaky vodka pie crust, perfect for sweet or savory pies. Optional: add sugar for a sweeter taste.
Ingredients:
  • 2.5 cups unbleached all-purpose flour
  • 0.75 cup cold unsalted butter, cut into small cubes
  • 0.5 cup chilled solid vegetable shortening, cut into cubes
  • 0.25 cup chilled vodka
  • 0.25 cup cold water
Instructions:
  • Combine flour and salt in a mixing bowl, whisking them together.
  • Use a knife or pastry blender to cut cold butter and shortening into the flour until it forms coarse crumbs.
  • Pour vodka and water over the flour mixture; combine until a tacky dough forms. Split the dough in half, shape each into a disk, wrap in plastic, and chill in the fridge for 1 hour or up to 2 days.
  • Take the dough out of the fridge and roll each piece from the center outwards. Then, bake following the pie recipe instructions.
