Edamame Stir Fry

Delicious whole soybeans boiled and mixed with veggies for a flavorful stir-fry.
Ingredients:
  • 1 pound frozen edamame
  • 1 can (8 oz) water chestnuts (whole or sliced), drained
  • 1 can (15 oz) whole kernel corn, drained
  • 10 baby carrots, washed and sliced
  • 2 garlic cloves, chopped
  • 1 teaspoon olive oil
  • Salt and pepper to taste*
Instructions:
  • In a large saucepan, boil 8 cups of water. Add frozen edamame and bring back to a boil for 3 to 5 minutes. Cook for another 5 minutes, then drain and rinse. Shell the edamame, keeping the beans aside.
  • While the garlic sizzles in fragrant olive oil, introduce a colorful medley of carrots, corn, water chestnuts, and edamame to the pan. Season with salt and pepper to your liking as the veggies gently cook for approximately 5-7 minutes, adding a touch of water to create a steamy environment.
