Homemade egg roll wrappers: 4 ingredients, quick fry in peanut oil, tastier than store-bought.
Ingredients:
  • 0.75 cup cold water
  • 1 large egg, beaten
  • 0.875 cup all-purpose flour
  • 2 tablespoons peanut oil, divided
Instructions:
  • Combine cold water, egg, and salt in a medium bowl and whisk until smooth. Gradually add flour in 3 portions, ensuring thorough mixing after each addition. Allow the mixture to rest at room temperature for 15 minutes.
  • Place the wok over high heat to get it really hot. Then, take it off the heat and give it a light, even coat of 1 tablespoon of peanut oil before putting it back on the heat and lowering the temperature to low.
  • Gently pour a quarter of the egg mixture into the heated wok, forming an 8-inch circle. Swiftly swirl the wok to evenly spread the batter. Cook until the bottom is golden brown and edges curl, about 45-60 seconds. Carefully transfer the cooked wrapper onto a paper towel, browned side facing down. Repeat for one more wrapper.
  • Coat the wok with the remaining 1 tablespoon of peanut oil, then prepare the remaining two wrappers as previously instructed.
  • Cut each completely cooled wrapper in half to create eight wrappers.
