Thanksgiving Turkey Lasagna Cups: Quick and inventive appetizer with egg roll wrappers, turkey, fire-roasted tomatoes, and mozzarella cheese. Ready in just 40 minutes.
Ingredients:
  • 6 egg roll wrappers
  • 12 tablespoons canned Muir Glen™ organic fire roasted crushed tomatoes or tomato puree
  • 6 tablespoons chopped cooked turkey
  • 12 tablespoons shredded mozzarella cheese (3 oz)
Instructions:
  • Preheat your oven to 350°F and generously coat 6 regular-size muffin cups with cooking spray.
  • Place 1 egg roll wrapper in each muffin cup. Fill with 1 tablespoon of tomatoes, turkey, and cheese. Fold the excess wrapper over like a package. Top each with 1 tablespoon of tomatoes and cheese.
  • Bake for approximately 25 minutes until the cheese is gooey and the egg roll wrapper is crispy.
