Cheesy turkey lasagna rolls made with low-fat ingredients for a lighter, delicious twist.
Ingredients:
  • 8 whole wheat lasagna noodles
  • 0.5 pound ground turkey
  • 6 cloves garlic, crushed
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 0.5 cup chopped fresh chives
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried parsley
  • 0.25 teaspoon dried basil
  • 2 egg whites
  • 1 (15 ounce) container reduced-fat ricotta cheese
  • 2 tablespoons crumbled low-fat feta cheese
  • 2 tablespoons grated Parmesan cheese
  • 0.5 teaspoon ground black pepper
  • 1 (28 ounce) jar low-fat tomato pasta sauce
  • 0.5 cup shredded low-fat Cheddar cheese
Instructions:
  • Preheat the oven to 375°F (190°C).
  • 1. Boil generously salted water in a large pot. 2. Cook lasagna noodles in the boiling water, stirring occasionally, for approximately 8 minutes until tender. 3. Drain the noodles.
  • In a nonstick skillet over medium heat, cook ground turkey and garlic until turkey is no longer pink, about 10 minutes. Add spinach, chives, oregano, parsley, and basil to the turkey mixture. Heat through and remove from heat.
  • In a bowl, beat egg whites until light, then fold in ricotta, feta, and Parmesan cheeses. Season with black pepper and mix in the ground turkey mixture.
  • Place cooked lasagna noodles flat on a sheet of waxed paper. Divide filling into 8 equal portions and shape into balls. Roll each portion of filling inside a noodle, creating stuffed lasagna rolls.
  • Coat the bottom of a 9x13-inch baking dish with a delicate layer of pasta sauce. Nestle the rolls in the dish with the seam sides facing down. Drizzle the remaining pasta sauce over the rolls and generously sprinkle with Cheddar cheese. Cover the dish with aluminum foil.
  • Bake until the cheese is melted and the sauce is bubbling in a preheated oven, approximately 40 minutes.
