Vintage spiced cake from the Depression/Wartime era.
Ingredients:
  • 2 tablespoons shortening
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon salt
  • 1 cup raisins
  • 1.5 cups water
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease an 8 or 9 inch square cake pan.
  • Combine sugar, shortening, cinnamon, nutmeg, allspice, salt, raisins, and water in a saucepan over medium-high heat. Bring to a boil and simmer for 5 minutes. Cool before serving.
  • Sift together the flour, baking powder, and baking soda. Combine with the cooled raisin mixture and stir gently until mixed. Transfer the batter into the prepared pan.
  • Preheat your oven to 350 degrees F (175 degrees C) and bake for 20 minutes.
