Festive eggnog muffins with real rum and pie spices offer a delicious twist on classic muffins for the holidays.
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.5 cup walnuts, chopped
  • 1 cup eggnog
  • 0.33333334326744 cup butter, melted
  • 0.25 cup rum
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a dozen muffin cups with paper liners or a quick spritz of grease.
  • In a large bowl, blend together flour, sugar, baking powder, nutmeg, and salt before adding walnuts.
  • Mix together the eggnog, melted butter, rum, egg, and vanilla extract in a separate bowl, then stir into the flour mixture until just moistened, creating a lumpy batter.
  • Transfer the batter into the muffin cups and bake in the oven until a toothpick inserted in the center comes out clean, approximately 15 minutes.
