Festive Belgian waffles made with eggnog, topped with raspberry preserves, fresh raspberries, and optional whipped cream for a special holiday breakfast or brunch.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon sugar
  • 2.5 teaspoons baking powder
  • 1.5 cups eggnog
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • 1 cup raspberry preserves
  • 2 cups raspberries
  • 1 cup whipped cream, to garnish
Instructions:
  • Preheat the Belgian waffle iron.
  • Combine the flour, sugar, and baking powder in a mixing bowl. Blend in 1 cup of eggnog, butter, and egg until smooth. Adjust consistency with more eggnog if desired for a perfect pourable batter.
  • Grease the waffle iron with non-stick cooking spray. Pour batter onto the heated waffle iron and cook until golden brown and crispy on both sides. Once steam subsides, transfer waffles to a plate to keep warm.
  • Heat the raspberry preserves in a pan over medium heat until they are smooth and pourable.
  • For a delightful presentation, generously drizzle raspberry preserves over the waffles and garnish with fresh raspberries. For added indulgence, top with a dollop of whipped cream on each waffle.
