Eggs Machiavellian (inspired by 'The Sims 3')

Elevate your breakfast with a fun twist - over-easy eggs and pan-grilled watermelon sprinkled with fresh parmesan.
Ingredients:
  • 2 (1/2-inch to 1-inch thick) quarter-slices watermelon
  • 2 eggs
  • 1 ounce shaved Parmesan cheese, or more to taste
  • 2 thin slices thinly sliced ham
Instructions:
  • Preheat a large skillet over high heat. Place the watermelon in the pan with the rind along the edge, ensuring half of the cooking surface is free.
  • In a skillet, crack eggs and sprinkle 1/4 of the Parmesan on top. Cook until the egg white starts to set, about 1 to 2 minutes. Gently fold the cooked egg white over the runny part. Cook for another 2 minutes until the edges are slightly crispy. Flip the eggs and watermelon. Sprinkle 1/4 of the Parmesan on the eggs and another 1/4 on the watermelon. Cook until the egg whites are crispy underneath but the yolk is still soft, approximately 1 to 2 minutes. Serve the eggs on a plate.
  • Cook the watermelon until it's nicely caramelized on the underside for about 1 minute. Flip the watermelon pieces, sprinkle with the rest of the Parmesan cheese, and place them on the plate with the eggs.
  • Sear ham slices in the flavorful skillet juices until nicely browned and warmed, about 1 to 2 minutes per side. Place on a plate alongside the watermelon and eggs.
