Award-winning Almond Lover's Bars made with sugar cookie mix for a Scandinavian bakery-inspired treat - quick, easy, and irresistible!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter or margarine, melted
  • 1/2 teaspoon almond extract
  • 1 egg
  • 1 can (8 oz) or 1 package (7 oz) almond paste, crumbled into 1/2-inch pieces
  • 1/4 cup sugar
  • 1/4 cup butter or margarine, melted
  • 2 eggs
  • 1/2 cup sliced almonds
  • 2 oz white chocolate baking bar, coarsely chopped (1/3 cup)
  • 2 tablespoons shortening
  • 1/4 cup sliced almonds
Instructions:
  • Preheat the oven to 350°F. Mix the cookie base ingredients in a large bowl until a soft dough forms. Spread the dough in an ungreased 13x9-inch pan and bake for 15 to 18 minutes until light golden brown.
  • In a large bowl, use an electric mixer on low speed to blend almond paste, sugar, and 1/4 cup melted butter until combined. Add 2 eggs and continue to beat until well blended, with a slightly lumpy texture.
  • Smoothly spread the almond paste mixture over the partially baked base. Sprinkle with 1/2 cup of almonds. Bake for an additional 15 to 20 minutes or until the filling is set (expect it to puff up while baking). Allow it to cool completely, approximately 1 hour.
  • Melt white chocolate and shortening in a 1-quart heavy saucepan over low heat, stirring constantly until smooth. Spread over cooled bars, sprinkle with 1/4 cup almonds, and allow topping to set for about 30 minutes. Cut into 8 rows by 4 rows to make bars and store covered at room temperature.
