Elevate your Thanksgiving table with butternut squash and apple puree served with wine-infused raisins and creamy goat cheese.
Ingredients:
  • 1 tablespoon butter
  • 1 sweet onion, chopped
  • 1 butternut squash - peeled, seeded, and cubed
  • 2 Gala apples, cored and cubed, or more to taste
  • 1 cup water, or more as needed
  • salt and ground black pepper to taste
  • 1 cup red wine
  • 0.5 cup cranberry juice
  • 0.5 cup water
  • 1 tablespoon mulling spices
  • 1.25 cups raisins
  • 8 ounces chevre (soft goat cheese), crumbled
Instructions:
  • In a large pot over medium-high heat, melt butter until sizzling. Sauté onion until it turns soft and translucent, about 5-10 minutes. Add butternut squash, apples, and 1 cup of water. Bring to a boil, then simmer on low heat until the apples are tender, for about 10-15 minutes.
  • Blend the squash mixture in batches in a blender, making sure not to fill it more than halfway full. Pulse a few times, then blend until smooth. Season with salt and pepper to taste before transferring the puree to a bowl.
  • In a saucepan, combine wine, cranberry juice, and 1/2 cup water. Bring to a boil and add mulling spices. Reduce heat to low and simmer for 2 minutes. Add raisins and simmer for 5 to 10 minutes until plumped. Drain and discard the wine mixture.
  • Combine the raisins with the squash puree and finish with a sprinkling of creamy goat cheese.
