Enoki mushroom patties with green onions, carrots, and eggs - a quick and easy omelet-style side dish ready in minutes.
Ingredients:
  • 2 (3 ounce) packages enoki mushrooms, coarsely chopped
  • 0.5 cup chopped green onions
  • 1 small carrot, peeled and very finely chopped
  • 4 eggs
  • 2 pinches ground white pepper, or to taste
  • 1 tablespoon vegetable oil, or as needed
Instructions:
  • Combine the mushrooms, green onion, and carrot in a large bowl. Stir in the eggs until fully mixed. Season with white pepper and mix thoroughly.
  • In a skillet over medium heat, warm up vegetable oil. Drop about 2 tablespoons of egg mixture for each patty into the hot oil. Gently press the patties with a spatula. Cook until the bottom is firm enough to flip, approximately 50 seconds. Flip the patties and cook until the other side is lightly browned, around 10 to 15 seconds. Repeat the process with the rest of the egg mixture.
