Elevate your dinner rolls with savory everything bagel-inspired seasoning for a flavorful and soft batch. Make the dough ahead for convenience, perfect for holidays and dinner parties. Enjoy the taste of onion, garlic, sesame, poppy seed, and sea salt in each bite.
Ingredients:
  • 1/2 cup water
  • 1/2 cup milk
  • 4 tablespoons butter
  • 3 cups Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1 package regular active or fast-acting dry yeast (2 1/4 teaspoons)
  • 1 egg
  • 1 egg, beaten
  • 1 tablespoon water
  • 1 tablespoon everything bagel seasoning
Instructions:
  • Combine water, milk, butter, and sugar in a 1 1/2-quart saucepan. Heat until simmering, then cool until the temperature reads 120°F to 130°F. In a large bowl, mix flour, salt, and yeast. Stir in the water mixture and 1 egg until just combined.
  • Lightly dust your work surface with flour. Transfer the dough to the floured surface. Knead by folding the dough towards you, then using the heels of your hands, push the dough away from you with a short rocking motion. Rotate the dough a quarter turn and repeat the process. Knead for about 5 minutes, adding more flour to the surface if the dough becomes sticky, until the dough is smooth and elastic.
  • Prepare a large bowl with a light coating of cooking spray. Transfer the dough into the greased bowl, ensuring all sides are coated. Loosely cover the bowl with plastic wrap and allow the dough to rise in a warm place for approximately 1 hour until it has doubled in size. To check if the dough is ready, press your fingertips about 1/2 inch into the dough - it is done rising when the indentation remains.
  • Coat a 13x9-inch pan with cooking spray. Use your fist to gently deflate the dough. Split the dough into 32 equal pieces and roll each piece into a ball before placing them in the pan.
  • Brush the dough with a mixture of beaten egg and 1 tablespoon of water, then sprinkle with seasoning. Cover the pan with a lightly sprayed sheet of plastic wrap, and let the dough rise in a warm place for about 40 minutes until it doubles in size. Remove the plastic wrap before baking.
  • Preheat oven to 375°F with the rack positioned in the lower third of the oven. Bake for 15 to 18 minutes until beautifully golden. Transfer to a cooling rack and enjoy warm or cooled.
  • **Prepare Ahead:** Once the dough has risen in the bowl, seal tightly with foil and refrigerate for 4 to 24 hours. Prior to baking, remove the foil and loosely cover with plastic wrap. Allow the dough to rise in a warm spot for approximately 2 hours or until doubled in size. If the dough rose somewhat in the refrigerator, the rising time may be shorter than 2 hours. Shape the dough and proceed with baking according to the recipe.
