Indulgent coconut-pecan pie with golden raisins, sweetened with sugar, eggs, butter, and flavorful extracts, baked to perfection. Makes two decadent pies.
Ingredients:
  • 2 (9 inch) pie shell
  • 4 eggs, beaten
  • 1.5 cups white sugar
  • 0.5 cup butter, melted and cooled
  • 1 tablespoon distilled white vinegar
  • 1 tablespoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup chopped pecans
  • 1 cup shredded coconut
  • 1 cup golden raisins
Instructions:
  • Preheat your oven to 325°F (165°C) for the perfect cooking temperature.
  • Combine eggs, sugar, and butter in a large mixing bowl, beating until smooth. Mix in vinegar, vanilla, and lemon juice until well combined. Fold in pecans, coconut, and raisins, then pour mixture into pie shells.
  • Bake in a hot oven for 40 minutes or until fully cooked in the middle.
