Quick Thai-inspired chicken recipe ready in 20 minutes!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 lb uncooked chicken breast tenders (not breaded), cut in half crosswise
  • 2 eggs, beaten
  • 2 cups water
  • 2 packages (3 oz each) chili-flavor ramen noodles
  • 1/4 cup lime juice
  • 4 medium green onions, sliced (1/4 cup)
  • 1/2 cup chopped salted peanuts
  • 4 teaspoons chopped fresh cilantro
Instructions:
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Brown the chicken for 4 to 5 minutes, stirring frequently. Add eggs and cook for 2 to 3 minutes until firm, stirring occasionally.
  • Combine water, noodles with seasoning packets, and lime juice in a pot. Cover and cook for 5 minutes, stirring occasionally to separate noodles.
  • Mix all ingredients together, then spoon onto serving plates. Top with onions, peanuts, and cilantro for a flavorful finish.
