Ingredients:
  • 6 eggs
  • 1 tablespoon chopped fresh chives
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper, if desired
  • 1/2 cup milk or half-and-half
  • 3 tablespoons butter
Instructions:
  • Combine eggs, chives, salt, and pepper in a medium bowl, whisk until well combined.
  • In a large skillet, gently warm the milk and butter over medium heat until the butter has melted and the mixture is steaming. Carefully pour in the egg mixture.
  • Allow the eggs to set around the edges of the skillet by gently pushing the cooked portions with a metal spatula. Avoid constant stirring. As more egg sets, stack it on top of the existing cooked egg mixture at the edge. Cook for 5 to 6 minutes until eggs are thickened but still moist.
