Extra-Nutty Peanut Brittle

Whip up quick and crowd-pleasing homemade peanut candies in just an hour!
Ingredients:
  • Butter for greasing
  • 1/2 cup light corn syrup
  • 1 cup sugar
  • 1/2 cup cold water
  • 1 container (1 lb) cocktail peanuts (3 cups)
  • 1 tablespoon butter (do not use margarine)
Instructions:
  • Butter up a large cookie sheet and wooden spoon generously.
  • In a nonstick saucepan, bring corn syrup, sugar, and water to a boil, stirring often. Boil for 10 to 15 minutes until the mixture reaches 230°F to 234°F on a candy thermometer and forms long threads. Add peanuts and cook for an extra 10 to 15 minutes until peanuts are golden brown and the mixture reaches 300°F.
  • In a small bowl, combine vanilla and baking soda until soda is dissolved. Remove saucepan from heat and mix in the vanilla mixture and butter. Spread on a cookie sheet, leveling the top with a buttered spoon to create a single layer of peanuts. Allow to cool for about 20 minutes before breaking into 1-inch pieces. Store in an airtight container for up to 3 weeks.
