Delicious homemade bread, inspired by my 75-year-old mother's recipe, made effortlessly in just under 3 hours using a Bosch mixer.
Ingredients:
  • 0.5 cup warm water
  • 3 (.25 ounce) packages active dry yeast
  • 0.25 cup bread flour
  • 1 tablespoon white sugar
  • 2 cups quick cooking oats
  • 2 cups whole wheat flour
  • 4.5 cups warm water
  • 1.5 tablespoons salt
  • 0.67 cup brown sugar
  • 0.67 cup vegetable oil
  • 10 cups bread flour
Instructions:
  • Combine 1/2 cup warm water, 1 tablespoon sugar, 1/4 cup bread flour, and yeast in the electric mixer's bowl. Allow to sit for approximately 5 minutes until it begins to bubble.
  • Combine oats, 4 1/2 cups warm water, whole wheat flour, salt, 2/3 cup sugar, and 2/3 cup oil in a mixing bowl. Mix on low speed using a dough hook for 1 to 2 minutes. Increase speed slightly and gradually add bread flour in 1/2 to 1 cup increments until the dough pulls away from the bowl's sides. The amount of flour needed may vary based on humidity. The dough will be slightly sticky, which is normal.
  • Place dough in a cozy oiled bowl, ensuring it's coated. Cover with a moist cloth and allow to rise in a warm spot for 1 hour, or until doubled in size.
  • Divide the dough into 6 portions, shape them into loaves, and then place them in greased 8 x 4 inch pans. Allow the dough to rise until it reaches 1 inch above the rim of the pans, typically about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C) and bake for 35 minutes until golden brown. Allow to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
